Food fraud raw materials

Hello everyone,

 

I m preparing our food fraud analysis and i don't  know if i should talk only about raw materials+ packaging only or i should add the process aids (enzyms, sunflower oil, metabisulfite) that we use for production.

 

 

Any idea please?

Good morning,

 

Based on my past experience, you have to consider everything without leaving behind  additives and preservatives..

At my organization we went further and conducted a  vulnerability assessment for detergents and sanitizers which can be counterfeited or diluted by suppliers

You have to consider all the materials to make the product (raw materials, additives & packaging materials). Methodologies for risk assessment may use, for example: USP food fraud or SSAFE
