you need a proper shelf life study done by an accredited lab, and you'll want to perform it across all egg types to see if dating is different. Organic are probably NOT going to last as long

Thanks for your reply I am a graduate student at U of Guelph, ON Canada. I need to work on my project for shell eggs shelf life determination. Since you are in the business can you please direct me to some sources of publications where i can start methodology planning. Appreciate your help thus far. many thanks once again

You may also want to reach out to the egg board of Ontario and/or Canada--they should be a wealth of information

 

Up to the introduction of SFCR, shelf life for all eggs in Canada had to comply with the regulations, that has since changed

 

You're barking up an interesting tree in Canada, due to the quota system, grading stations don't have a lot of wiggle room and (IMHO) there isn't an incentive for the farmers to adjust anymore than they have to try and improve on farm egg quality

 

Are you going to compare traditional against organic?
