What SQF Code is for Meat and Poultry Processing + HACCP ?

Hi. I am writing an SQF program for a local chicken and turkey manufacturer that makes meatballs, cutlets etc. DO I use SQF Module 9 for this (meat processing)? There are alot of codes for animal husbandry that do not apply. I know module 2 is needed as well. Also what would the CCP be for this kind of processing? I have never done animal before - only bakery and snacks. Thanks!

There is lots of good food safety information out there about meat processing, and you'll probably have multiple CCPs, particularly if some products have allergens and others do not.

 

Lots of temperature monitoring as these product types should not exceed 7C during processing (unless cooking obviously)

 

If you're grinding/mincing on site it looks like you'll be FSC 8 and 9
