I am working in the food factory, there is one frying line with using soybean oil and palm oil. Our machine is deep fry belt.
I want to know about how to clean the tool, equipment when we move from soybean oil to palm oil. Or anyone know any detergent, soap to clean? Now we are using repid test kit, there are sometime we did not pass after clean. Thank you.

what do you consider a pass/fail?

are you testing for allergens between oil types?

fry belts are notoriously difficult to clean as the design has to withstand the temperatures and as such is full of nooks and crannies

are you sure the sanitation team is following the  minimum soak time for the foam step?
