Best Method for Marking Carcasses?

I was curious what some of the methods of marking carcasses intended for the carcass cooler are. We are in the process of a few changes that require us to mark carcasses. Any ideas?

They're called Meat Markers. For example.
It says its registered for use in a meat plant, but I guess you could look into it a little more.
