Condensation removal - slaughterhouse

Hi all, looking for some recommendations/advise. I work in a turkey slaughter plant and we often have condensation on the roof in the EV room. The roof is made of grooved panels, which makes clearing condensation with squeegees very difficult. The moisture just builds up in the grooves and then forms back to droplets. Does anyone use any other method to remove condensation other than squeegees in their plants? Thanks in advance.

Fans blowing across the ceiling and (possibly) venting would help. CFM requirements can be determined by a professional survey, but the cost to install and operate is minimal in most cases.

I've heard that installing fans in the top corners of the room will reduce condensation. Assuming you have refer units, keeping one on continuously to pull moisture out of the air might help. Other than that, the roof may need to be insulated, which I can't imagine is cheap.
