Processing aids for potato peeled production

Hi

I currently am using sodium metabisulphite for potato peeled production and I was wondering if anybody has any experience in this line if processing and if there is another stable chemical out there as this chemical is corroding machinary etc as it is very volatile.

for browning?  sodium metabisulfite seems to be commonly used for potato browning.   some use a cocktail.   

 

sapp, citric acid, malic acid.....
