Food defense plan, describing 3 process steps for vulnerability assessment

Hi there,

I am working on our food defense plan, we are small baking company. I have measuring and mixing as key activity and we do not receive bulk liquids.

I tried to use FDA food defense plan builder, however it seemed little hard to me because they do not have much explanations.

Should I include all our process steps for the vulnerability assessment or should I only include 3 of the process steps that is also KAT?

Where can I find an example food defense plan to look into to have ideas?

I would suggest you play around with the FDA tool a little more. It can be a little confusing at first, but with some practice outputs a perfectly fine Food Defense Plan.

If you choose to not go that route, you still need to list all of the process steps, not just the ones that are KAT.

Food Defense Plans are generally proprietary, so I'm not sure you will have much luck finding an example that people would be willing to share.

if you want to use the KATs, the link below has some free or inexpensive trainings.   Actually all IA trainings are available not just KAT`.

You should include all process steps in your vulnerability assessment.

Thank you everyone.

I found this document to be particularly helpful (although it is long)

Hi gdicairano,

It's an impressive analytical technique + worked examples . Thks.

I do think it should also come with a sheet of paracetamol attached.
