Storage temperatures on case and product labels do not match
Our labels used to state that product much be kept below 41*F. That was changed to 40*F a few months ago.
However, the person who orders our cases forgot to make the change on the cases, so they still say 41*F.
Can we use the rest of the cases or do they have to match?
*Edited* These are 2 lb bags of imitation crab. It's pack 5/2#. The individual (retail) packages are correct. They case label is correct.
It's just the printed box that says 41*F. I THINK these are the last of the cases from an older shipment and new ones have been ordered.
Are these regulated by USDA? or?

You should be fine since the individual label is correct.
Also with it being a FDA product - they do say 41 and under.
You can also argue 41 or 40 will keep the product safe.
Usually governing bodies will let you have a slight variance (like yours) as long as the printed instruction is still within the regulatory requirements
