Oven validation

Hi all, 

I am new to QA position and need your help regarding oven validation using data logger.

What exactly I have to look for when validating oven with data logger and how should I interpret the final results ,

What exactly I have to look for when validating oven with data logger and how should I interpret the final results ,

It will likely help if you can add a little context, eg -

 

Is this a Production "oven" or a laboratory "oven" ?

If Production, what kind of Oven/Product /Process ?

 

PS - there are a lot of threads here on various aspects of data loggers but which often depend on the details.

It's about the production combi oven. Products are roasted chicken, cooked chicken breast, Cooked pork, and roasted duck.

I already did a few trails. The product temperature reached above 80°C for steam cook chicken breast, the oven temperature was set up to 90°C but according to data logger, maximum oven temperature was (environment temperature) 85°C. There is 5°C temperature difference in oven temperature. So would that be okay?

Meat/ovens not my area of expertise although offhand the product temperature looks (safety) reasonable assuming at the slowest heating location (I guess quality relates to time also).

There are some meat people on this Forum so probably have to wait a bit.

Could you purchase a thermometer that you could test to ensure accuracy? Then place that in the oven to check how close the oven runs to set temperatures?

Am I understanding the goal to be a validation or verification of the equipment, like an annual calibration?  Or are you trying to validate your thermal lethality process?
