APC Threshold for Baked Goods?

Hi Everyone, 

 

Has the FDA set an APC threshold for baked goods such as brownies and cookies? I am seeing 25,000 cfu/g, but that seems high to me?

The one I found was 10,000/g for non-routine.

Hi MES,

 

Afaik, several related threads here have concluded that unless, perhaps, the Product has a specific US Identity/Classification, eg ice-cream. Official US National micro limits do not exist.  As I understand, various dairy et al  limits were attempted ca 1960s, caused a legal nightmare (ie justification) and were rapidly rescinded. Enter Pillsbury/HACCP. :smile::

 

One individual APC measurement with no context is unfortunately of limited interpretation.
