Best Practice when there are only two Washing Sink Compartments?

Hi, what is the best practice that we can apply if there's only 2 compartment washing sink prepared? Can we sanitize equipment using bottle sprayer and let it dry for minutes before keeping?

If it were me, and since you have a sanitizing step, I might combine wash and rinse in the first compartment (ideally rinse would have been the middle compartment).  That way, you would wash parts and then drain the compartment and rinse in the same compartment.  I think the sanitizing should be kept as a compartment so that you know a certain contact time (e.g., 30 s) is met; otherwise, you might not know the sanitizer is in contact with the surfaces long enough.  Additionally, after that contact time is met, you can dry parts immediately if you want, according to what matches your procedures.  I see those as advantages and the importance of keeping the sanitizer as a compartment.
