Hazard Analysis - Preservative

Hi all,

 

If there's preservative used and during weighing that particular preservative, what are the hazard that possibly occurs and what is the preventive measure?

If the preservative has a legislated limit as an additive, meaning that the quantum satis principle doesn't apply, then the hazard is to go over the limit which may be harmful to consumers (can't list the effects, as they vary according to specific substances).

Preventive measure is calibration of scales and weighs from an external accredited company and daily documented internal checks as well. Also record keeping for the quantity used in the total weight of the product. From time to time you can also send a sample of a final product to an external lab to measure the quantity of said additive.

What do you mean by documented internal checks, what kind of internal document that we must prepare? also, regarding the record keeping quantity used in the total weight of the product, can you elaborate more if there's calculation that needed to be done? What's the formula or how to calculate in the simplest way?

To add to Evans X’s recommendations, there is also a hazard of the preservative not being added which could cause food safety issues in the final product. A double sign off on the addition would be required as a minimum.

 

Your internal documents would include a check of the scales before use with calibrated weights, confirmation weight of preservative and other ingredients added to the batch and the batch size. The amount needed to be added is based on the formula so 0.1% preservative in a 1,000kg batch = 1kg.

 

It is also a good idea to monitor stock regularly so that you can see that the correct amount has been used.
