Normally the calculation is based on the temperature*/time in the holding tube.

 

* Temperature is measured at the end of the holding tube.

In the case of accumulated lethality in a pasteurization process consisting of heating (plate heat exchanger), holding tube, regeneration, and cooling stages: Should the accumulated lethality be calculated considering only the holding tube, or should the other stages be included as well?
