OPRP Validation Plan?
Hi Everyone
I work in wine industry and I'm working on HACCP Plan. The last step of addition of KMS in wine before bottling is our OPRP and for that we have daily sulphur analysis but What do I add in OPRP Validation plan, is this regular monitoring of Sulphur is my OPRP validation plan? I can't validate the limit since it is governed by regulatory body it's fixed .
Forms of validation could be:
A copy of scientific data suggesting the limit is effective. In some cases, the regulation may be enough. Others may require a copy of the scientific study that formed the basis of the regulation (CCP).
Calibration records for anything used to test for sulfur content
Any third party lab testing also showing adequate sulfur level or that the hazard is being controlled.
Shelf life testing indicating that level is adequate to control hazard.

We have carbonation unit for sparkling wine and purchase CO2 cylinder from third party and get CoA from supplier. And we also have filter in carbonation unit. After having this all measures can it be a an OPRP??
