Risk analysis protocol

Hello,

We have batches of donuts blocked due to a temperature problem. We've found that the temperature between the cartons in the refrigerated truck was a little above our limit, and we'd like to know if we can do a risk analysis to release or destroy these batches, and how to go about it?

 

How to conduct such risk analysis please?

What type of donuts? with chocolate? fresh cream?, jam? what is little above? 2C, 4C? for how many hours they were in the transit?

with chocolate and caramel. We don't know exactly because the temperature between box were different at the reception in the external warehouse but the temperature inside the donuts was not disturbed
