Cooked chicken process HACCP requirements

Hi All, 

I am working on a project.  We are going to make  cooked chicken , however we will be still giving cooking instructions on the packaging. consumer hast to cook product before they consume. 

I am not sure about HACCP documentation and do not have time to create the paperwork, new SOP, HACCP study etc. 

 

 

Could you please advise me on this ?

Below are sources that can help you with your HACCP plan. Not sure on your wording in your question but you have to spend time on this to get it right. If you don't have time then you need to speak up. 

 

Cooking instructions/validation instructions need to be performed in house. You must know how long it will take to reach 74 C.
