FSSC V6 Internal Audit Checklist

Good morning all Food Safety Bloggers 

 

Trust you are all well.

 

I have just come out of a V6 FSSC 22000 audit 

 

Had a few finding on the additional requirements ie: 

 

1.  Additional requirements 2.5.6 - An allergen risk assessment covering all potential sources of allergen cross contamination had not yet been conducted.

 

2.  Additional requirements 2.5.11 - A foreign matter risk assessment had not been conducted to determine the need and type of foreign body detection equipment is required.

 

Please can you share some ideas on how to set this risk assessment up.

 

Any idea on what quality objectives can be focused on.

I went thru my first v6 a few months ago as well.  

The allergen thing is pretty straight forward.   What allergens are in your building?   Here, I just have four, and I put those four in every formula, so the risk assessment is quite small.   To me this is the best way to handle allergens if it's possible to do so, it gets rid of all risk of cross contamination.

 

The foreign material thing I just added a new page to my hazard analysis and did each foreign material (like wood pallets) just like I rated everything else in the HA, so likelihood, severity, etc.
