Trichinella control

Has any pork slaughtering plant in Canada successfully implemented CFIA-approved freezing methods to control Trichinella, or do they outsource this process to cold storage facilities? If any plant has done so and received CFIA approval, could they kindly share their methodology with me?

Could you please let me know how to get approved? Additionally, I would like to clarify whether you are operating from a slaughtering plant; if so, do you handle the entire process yourself, or do you outsource part of it to a cold storage facility?

Step 1

Decide which of the approved methods you want to follow

Step 2

Have a discussion with your VIC   they will help direct you

 

Generally speaking to get approval you will need to follow one of the approved methods explicitly for long enough to have VALIDATED your process

e.g. sent enough samples off POST method timeline to determine the the trichinella was inactivated 

SO that means, you are going to live in the freezer for the next number of months
