Hi Isemrin,

Not possible to give you a HACCP Program just like that. A HACCP Plan is a dynamic set of living documents that require to fit into your own UNIQUE facility needs and organization's pre-requisites or GMP.

However, it would be possible for the forum members to help you along whenever you have hitches but you really would have to drive the HACCP Plan first. There are some generic Haccp Plans under the FDA website that Simon had posted earlier. This can be handy as a reference.

Nevertheless, tea as a finished product is subject to a fermentation process and there could be issues there. You will have to tell us because we are NOT where you are.

However, one issue that often crops up - colouring. If it has ot be done, it must be permitted or better still natural colouring.

Do tell us more.

Hi Isemrin - Welcome to the forums. :D

Have you started with your HACCP plan at all? For example have you set up a team or mapped out the process flow diagram. Try and give us some more information and we will try all we can to help.

Regards,
Simon
Hi,

If you refer to the recent thread on Codex, you will find practically everything there that you should need to know.

I agree with Simon that it would be a wise idea to post the Process Flowchart on the forum and all will study and take it from there. If you have not done so, do let us know when that can be made possible.

One of the threads I had posted earlier on the Jam Process shows a format for Identification for Potential Hazards. Have a look.
