Hello,
At 1st, i would like to question is that the meat ball cooked? or uncooked? what is the problem for store big amount of meatball in deep freeze? Any antioxidant agent?and how big ur amount? For the shelf life of frozen meat ball, you can send the meat ball to lab test if you require fast result. IF not, the company that you consult can do it by themself. As my experience, the shelf life is 2 years for frozen meatball, but sometime even the customer return after 3 years, it still stay in good condition.

I also try to find any journal or info for this problem last time but fail to get.
Hope that my infomation is helpful.
