HACCP audit checklist core elements

Hi guys,

I have been struggling with these:

1- What is the definition of a core element in a HACCP audit?
2- How many (Or % of total elements) core elements should there be in a HACCP audit checklist?

Dear Dugaucher,

It may well depend on audit for what standard ?

eg BRC (food) assumes Codex HACCP so I guess the core elements are as defined in the well - known "steps" of the prime document / specific standard's requirements.

The USA general staging plan is somewhat different in a few places although very similar in the main elements.

More info needed probably
