Hi,
I am replying to something posted two years back.
Since I am working for a flight catering unit hence I definitely want tio take it forward.

Definitely you implement full fledged HACCP in an flight catering unit. Moreover in certain cases it is even your customer requirement to which you have to comply. Sometimes the customer requirements are so elaborate it takes care of most of the food safety management system requirement.

Now for implementation there are many things.
In a flight catering you prepare different kind of food products; different from each other in a number of aspects. Hence the products having similar kind of raw material and processes are grouped together. Taking one representative product/recipe the whole HACCP program (finished product specs, handling requirement, Cps, CCPs, corrective action etc.) is defined.
All above is coupled with the strict vendor development program.
