Thanks for sharing.
are you sure the critical limit for frozen storage is -12 deg C.
Also thawing is allowed at less than 8 deg C.
Thawing at 2 to 5 Deg C - It will take you something like 60 hrs to thaw the frozen item completely.

This guide information maybe typing wrong , Good frozen storage generally required temperature of –18 °C or below .
For Thawing method , there are three safe ways to thaw food: in the refrigerator, in cold water, and in the microwave. This guide is show Refrigerator Thawing method so food will take longer to thaw in a refrigerator set at
2 °C (35 °F) - 5 °C (40 °F) but it safety from Danger zone.
Restaurant can use this guideline(not for reference) but must select method that suitable with your food & time.
