Differences between High Risk and High Care in Issue 6

We are a company that manufactures prepared and washed salad leaf mixes. After washing, they pass into our HIgh Care salad bagging area. From the Production Zone Decision Tree (Fig 6), this would appear to be a High Care area.
We also manufacture prepared salad mixes such as Chicken and Pasta salad, the ingredients are all supplied cooked from our suppliers and are prepared in a room adjoining the salad bagging area. Please advise whether this area is High Risk or High Care.

Ha! Tricky! I would say that as you have no barriers between, then it's high care; however, as it's on a specific line, then you could argue it's high risk.
If you read p95, they specifically cite prepared salads as one of the products to be high care. I think you have to be careful to be pragmatic because if you specify this area as high risk, then it should be physically segregated and what if the customer wants to include a fresh herb sprig on top next relaunch? You could end up restricting yourself unduly.
