When will you identify if the hazards are CCP or oPRP?

Textbook answer – according to the procedures given in ISO22000/22004 standards, eg para 7.4.4 of the former. ++.
Operational answer – by choosing one of the available, validatable methodologies, either qualitative or quantitative, which is most suitable to yr own product / process / implementation style.
In practice, currently, most popular methods seem to be based on the traditional Codex tree, suitably modified as per iso 22000/22004 requirements. However a variety of alternatives are also in use, eg can try this short review covering up ca. 2 years back -.
