Nitrogen Freezing Opinion please

Hi All,

I've been including the nitrogen used in freezer tunnels as an ingredient in HACCP plans, however on reflection is it really an ingredient and needs to be on HACCp or as it adds nothing to the end product is it a processing aid and doesn't need to be on the plan or processing aid but still include on the plan?

Hi Lanser,

Not exactly as ingredient but as a processing aid which requires food grade nitrogen. TQ.

Nitrogen in this sense would be a processing aid, it does not add anything to the final product, and leaves no residues in the final product. It would be incorrect to label it as an ingredient or even food additive IMO.
