Safe method for keeping food hot at a buffet?

Hi

 

Please look to the picture , actually I am looking for safe method for keeping food hot at the buffet , the fuel above is unsafe and needs strict handling , I am looking for something doing the same purpose but safe and affordable due to the large numbers of buffets that we have in a daily basis .

Water bath or hot well device are the most efficient and reliable methods. As I'm sure you're aware flame heaters can either cause scorching or cold spots, both of which deteriorate the quality of the product.

 

The initial costs will hurt with the above mentioned styles but this depends on what you define by "large numbers". Provide the forum with more information into your process so we can help better.

I think electric rod with water or induction based buffet are also reliable but maybe not affordable.
