Yogurt with colour defect, unpleasant flavor and odour

Hi everyone!

Where I work, We are having a problem with the yogurt of a specific filling machine (we have two machines where we package the same strawberry, banana, and peach flavored stirred yogurt; the one with the problem is the oldest). We have some customers claims who have strawberry yogurt without colour and with umpleasant flavor and odour (like vinegar).
The straberry flavoring is artificial, the same used in the two machines.

Do you have some information about this kind of problem? We are improving the CIP of the machine. Do you have technical information about hygienic practices in thermoforming filling machines?

A vinegar like off defect could be caused by Acetic acid bacteria

 

You need to investigate the source of contamination, are you using just flavors or fruit conserves?
