Is it safe to soak potato chips in sodium metabisulphite?
Is is safe to soak potato chips in sodium metabisulphite when trying to reduce browning? If no, what are the effects of using it and what can be an alternative apart from blanching.
Hi Frank,
:welcome:
Welcome to the IFSQN forums.
E223 Sodium Metabisulphite is an allergen. May cause allergic reactions, particularly skin irritation, gastric irritation and asthma. Not recommended for consumption by children.
Domestically I rinse regularly or add table salt to the water, I have heard of people also using lemon juice and vinegar.
Kind regards,
Tony
