Elimination of mould in food processing plant
Dear members,
I am a microbiologist and worked in FDA (Myanmar), Ministry of Health, as food microbiologist for 15 years. I am recently retired as director of Mandalay Branch of FDA and now working at a sport drink factory as part-time job.Please help me to solve the problem with mould in food processing plant.

Hi Dr Zin,
May I ask hows the Temperature - relative humidity - Air flow in the plant? and what kind of food you produce? what is the cleaning procedure like & chemical used! when the was the last preventive maintenance done for the AC unites and when the filter changed!

I'm from Myanmar.
To solve your points :
- Food Plant : “deep clean” equipment need to clean have less micro issues
- Ceilings in most areas are of a cleanable material and appear to be maintained and in good repair
- Food Plant's the walls and floors have cracks, seams and holes, and when the equipment, contains rust and nothing action for cleaning
- Cooling units are regularly to be cleaned
- Facilities where overhead structures (such as lights) are made accessible for cleaning and sanitation
- People Movement/GMPs is there an opportunity and need at your facility for additional training and education of production employees, supervisors, maintenance and QA on GMPs, employee hygiene and routine and non-routine activities/duties?

Hi! It would be interesting to know more and know how it's manifesting itself.
Mould could be an issue with being unsightly in your environment but also limit product shelf life. In either case, the first step is good cleaning and good disinfection. If you're doing both of these then it shouldn't be an issue. That said, if you have problems with mould in your product it's not only environmental mould which could be an issue. If you're using MAP packing especially to lengthen life then mould complaints or detection in end of life samples can be an indicator of sealing issues. Even micro holes in packaging can let in enough oxygen to let the mould grow.
