Retail Establishments, labeling of Deli platters

HI Everyone, 

We are trying to put together Deli platter, The platters will be prepared ahead of time and sitting on the retail shelf in a deli cooler ready for customers to purchase. We will be adding meat and cheese products to the platter.

 

I know since the product will be prepared ahead of time it would require the NFP panel and a proper label.

My question is though, if we are slicing meat products and adding it to the tray how does it work with the USDA bugs?

Would we be required to add a USDA bug to the labels? The suppliers whom we purchase the products from are USDA facilities but I know its illegal for us to use their facility bug since its specific for them. Would we not add the bug since its just sliced or how would this work?

Unless you have an exemption as a retail facility where products are sold at the same site where they are prepared, you will need to become a USDA inspected facility to process meat products and will have your own inspection legend to apply to the label. Producing amenable products without the benefit of inspection renders them adulterated.
