What kind of forms should be used in case of organic inspection?

Product source (organic) documentation and traceability (product that you brought in, how much was used to make a particular product, accountability, etc.) of the organic products are the key during an organic inspection.

Also important are the HACCP, plant layout, label samples, pest management organic practices, sanitation, water, process flow, receiving, storage, shipping documentation showing your controls are up to the task. Cross contamination is the key. Record-keeping practices will be evaluated.
If you are growing a raw agricultural commodity, you will need documentation regarding the water, soil, animal impacts and other factors that affect a farm - transport equipment, produce storage, produce processing.
In the USA some states, such as California, have their own organic program. Certifying bodies will want to see those documents too. We are certified by Oregon Tilth. They were very helpful in helping us understand the national organic program and their requirements for certification.
