Retailer QAS Quality Attribute Sheet

I am now working in the game industry (20 years behind the rest) and have been challenged to produce a best in class QAS for game products.

I have some pretty basic ones so does anyone have an example of a poultry based one they'd be prepared to share?

which game in particular?  I worked with a small game bird for 4 years

Two weeks of retailer audits and BRC later I can finally respond.

If you can shoot it in the UK we process it from Red Deer to squirrel Quail to Pheasant not all for the retailers though.

Plus I am married to a pretty game bird :)

I would use colour and texture mostly for game birds

darker meat than chicken or turkey, slightly chewier texture and shorter cooking times, of and the aroma is more.....pungent, when cooking....quail (that's what game bird I'm really familiar with) not so much (yum yum)

Are you just selling frozen portions or turning them into something else?
