Potato Process Query
Hi All,
We are low risk factory processing potatoes for further process. I have always sent samples of fresh water i.e. first point of use, but never considered to send starchy water mixed with sulphites for micro testing at end point of use. Please can you advise, what steps I should take for assessing product risk during washing in these tanks? We are using mains water for this process and potatoes are cooked at customers end

are you adding an anti microbial solution to the wash water??
you need to test it to at least see what you're working with or against

The peeled potatoes go through Microsoak solution mixed with water and after so long processing water become starchy and that is were I need to take a sample of water to see what is the risk to finish product. I have send already sample of water for test analysis to see what micro will come back, but not sure what other risks I need to put to risk assessment?

I would think you only need to check the water for potability..............so if the microsoak doesn't break down and create a separate dangerous chemical, then I wouldn't think the startch would change that.....are you adding fresh treated potable water throughout the day?
