HACCP Analysis for Produce Distributor

Morning all, we are a produce distributor, specializing in packing whole (unprocessed) produce as a home delivery kit based on the customers customized order.  As I start to work on our hazard analysis, does one need to be done for EVERY item we might carry at any given time, or can I categorize items (i.e. veggies, fruits, etc)

IMO: You can categorize them together as long as they have similar hazards and are going through the same processing steps.
