As per ISO 22000:2005, what are the CCP's for bread manufacturing?

Hi all....Greetings

Let me introduce my self . M Ramakrishna... food technologist from southern part of India.

I just wanted to open the discussion related to bakery industry.

As per ISO 22000:2005, what are all could be the CCP's for a bread manufacturing company.

Will it be cooling comes as a CCP ?

I think baking & metal detector both would be CCP's

Generally, you would see your baking step (Kill-Step) and metal detection as CCP's. What are your products?

 

Much depends on YOUR process and the specific products you produce. No facility is the same.
