Definition of monitoring as per FSEP
I wanted to clarify, in this case, who would be monitoring.
Let’s use an example: for condensation, we have a designated employee cleaning any condensations present, then we have someone filling in records after they do their condensation checks. And then qa verifies the record and haccp coordinator reviews them for reassessment.
So from the above example, who is the monitor?

The monitor is the person CHECKING the condensation.
The person wiping condensation is simply another production employee. However, I would urge you to make it the same person.
As condensation is a continuing issue in your situation (and I know it's an ongoing issue in meat plants in particular) you really should be taking steps to correct the problem.
Sooo, the person wiping should have a floor plan where they can mark where they are removing the condensation and at what frequency; e.g. you would then have real data for maintenance and the plant manager to try and fix the problem (plus no one wants to pay an employee to walk around with a long handled mop all day and you are constantly running the risk on contamination food/surfaces below)
In this situation, your monitor is really only monitoring the job the wiper is doing (and whether or not it's effective) they aren't actually monitoring the condensation.
