HACCP Plan for sourdough starters?

Has anyone had to create a HACCP plan for their sourdough starters?

 

Our local health authority is asking that we submit for approval a HACCP plan for the maintenance of our sourdough starters.

 

I'm not finding a straight forward template or even information for such a thing.
