Traceability in a restaurant setting

 Hello,

 

I need help on how to address the traceability requirement in ISO 22000.

Our business operates in a large scale restaurant setting.

 

By Canadian law, traceability is not required for restaurants. I was wondering if you recommend to create an SOP for traceabilty and if so, how far into detail would you go. (We have a product recall SOP)

Hi Astika,

 

I am not aware of Canadian law regarding ISO. But as per ISO 22000 requirement we should maintain traceability records and to be included into ISO manual. For traceability we should maintain effective documentation from receiving of raw materials to end product, if you delivering to consumers we should maintain our documents until dispatch. Example, Dispatch time, temp, location, time to reach that location.

 

Traceability is not a difficult task since you are already doing Product recall procedure. Maintaining a proper documents will easy out the traceability since traceability is one of the part in product recall.
