New product food safety risk assessment
Hi All
I would appreciate any thoughts on the information which should be gathered during the product development and trial process ( so before product launch ) to evaluate if the product can be produced safely and if there are any additional risks being introduced.
So, I'm thinking that as part of this pre launch pack there will be shelf life info (constant and abused temperature), allergen risk assessment, recipe, new raw material specifications, new handling / operational practices, supply chain differences, customer handling practices which may have an adverse effect on product (quality), process validation if the process has changed.
Does this look comprehensive, is there anything I have missed ?
I am thinking of a checklist to answer a question for each topic - has something changed, what's the risk, how is it mitigated, is the product safe ?
Any thoughts would be hugely appreciated

I also included maintenance on my new product check lists. When I worked in beverages we had different bottle sizes and case sizes. So sometimes customers had to order change parts in order for us to run the product. It's not a food safety item but if equipment needs switched out or maintenance needs to know specific settings it's nice to include. There were many times that we thought we were ready to go with a new item only to find out no one had mentioned it to our maintenance team and we had to get parts ordered.
Don't forget to include labeling review.
