Necessary for product testing? (baking of poultry)

Hello,

 

I took over the job as quality manager in a poultry slaughtery and processing company.

 

The previous manager did a monthly control on the poultry products with a baking session.

We only have raw whole chickens and parts of chickens, no preparations.

 

Is it necessary to do this product testing monthly (and document)?

And for which clause in the BRC standard is this necessary?

Section 5.6.1 (Product Inspection and Testing) is the one you want to look at.
You'll need to determine/justify the frequency "according to risk", and potentially also "according to customer requirements" (mentioned in the Interpretation Guide, but not the standard itself).

I guess the first question is: how did the previous quality manager determine that monthly was the correct frequency, and does their reasoning still make sense?
