Considerations when changing product from mango juice to pineapple juice with the same line?
You'll potentially find that the Brix/Acid ratio of pineapple juice is more variable than for mango, and this can have quite a big impact on flavour profile.
The level of variation you will see is going to depend on the varieties, origins etc for the concentrate you're using, so I'd have a look at the specifications you've got for this and see how large that range might be.
If you can't avoid it (e.g. purchasing have already bought it) then possibly worth checking different batches and considering blending them to achieve a more consistent end product.
This may also depend on your customer base & country of sale - Mango is an allergen in Taiwan so unless you can show absence of mango residue you might be obliged to apply an alibi label if the pineapple juice is going to be supplied into Taiwan
