Does CCP monitoring have to be every second in ISO 22000?

Does the CCP monitoring period have to be done every second to meet "timely detection" in ISO 22000? What if we have empirical data that the critical limit will not be exceeded even if we do monitoring weekly?

Good morning Yongki, while I admit I am not familiar with the specific requirements of ISO 22000, you would typically want to match up your CCP monitoring to the highest frequency possible (shortest intervals), while still being realistic and maintainable. There are going to be many things to consider in this such as:

  • Does the set frequency allow me to pull back all material made since the last good check without the possibility that it has been shipped to a customer
  • Is the financial burden of discarding (or reworking/reprocessing) all material between set intervals acceptable 
  • What is the impact on production and man hours to increase/decrease the interval
  • What is the nature of the risks associated with the CCP

Regardless of your empirical data, if you have a CCP monitoring check that doesn't pass, you now have to sequester the material made up to the last good check and determine a disposition.

What is the Product/Process/hazard you are discussing ?

 

You may have slightly misquoted, eg -

 

8.5.2.4.2  In addition, for each control measure, the systematic approach shall include an assessment of the feasibility of:
a)  establishing measurable critical limits and/or measurable/observable action criteria;
b)  monitoring  to  detect  any  failure  to  remain  within  critical  limit  and/or  measurable/observable action criteria;
c)  applying timely corrections in case of failure.

 

 

Yr comment makes me wonder whether there is a significant hazard or not  ?

 

One possible interpretation of (c) is as to whether continuous monitoring is possible or not.
