Does anyone have ideas on how we can challenge our Cyber Security system?

Hi all, I am wanting to do our annual food defense challenge in cyber security. Does anyone have any ideas on how we can challenge our system? We buy peanuts in bulk from the farm, shell and package them and ship out for further processing. What type of challenge document do I use to frame this on?

Look for a hacker - seriously, this is what a client did.
They asked their employees that had kids if their kids knew of anyone that did hacking.
They found two and one was successful on hacking into their "secured" system.
