Fresh herbs micro testing- washed with PAA sanitizer

Hello,

 

We are a soup, dips and pesto manufacturing plant. Wanted to understand more on micro testing requiremets as I am new to this role. Could someone comment if we need Listeria Mono testing for washed fresh herbs used to produce Pesto?

You will more than likely need to describe your process if you wish to receive sound advice. It is good practice to monitor raw materials but can be extremely important if you are reliant on them being ready to eat. 

 

I assume that you are treating fresh herbs by washing them with PAA, are these fresh herbs then subject to a further treatment that would kill pathogens such as pasteurisation?

Even if the raw material or final product is pasteurized, it would be smart to test for things like Listeria to have a failsafe if pasteurization somehow fails.
