Creating an Accidental Contamination Procedure: Need Guidance
Hello,
I have a customer audit very soon and i need to write a procedure related to the risk of product contamination in case of spillage for example.
We have a procedure related to glass/foreign bodies only
Any help please for this procedure?

It's best to document what you are currently doing. What do you do if there is an issue?
It depends on what product you are dealing with in your facility and what the spillage is.

this is for allergens spillage but you can modify whatever you need
- Operative must inform Managers, QA and Hygiene Team Leader and cordon off the affected area (if necessary)
- Area must be cleaned with ________________and the visual check is necessary to ensure that cleaning has been effective at removing contamination (________ and floors).
- Operative, managers, QA and hygiene team leader must ensure that all of the spillage is disposed of in the relevant external waste container.
- Spillage __________________ must be clean separately from standard equipment and if possible, at the end of shift to avoid cross-contamination.
- Following cleaning of the area the operative should change their overalls and inspect shoes.
- Once cleaning is finished, the area is to be assessed by the QA or production manager and signed off acceptable prior to production start-up and confirming the areas free from contamination.
- The NC`s must be raised and investigated.

We produce pizza and in the standard we talk about product contamination (e.g. spillage) . Which mean that spillage is a part of the reason of contamination. Mostlly we talk about foreign bodies (glass, wood, metal...) but never about chemical incident.
We have cleaning and maintenance products but they are stored away.
i don't know if i have to include the spillage of product used to prepare pizza (milk, oils, eggs...)
chemicals :
- Chemicals spillage procedure
- Any activities carried out must stop, then the hygiene team leader and QA must be informed.
- Separate the area with black & yellow tape.
- Collect chemical spill kit from chemicals storage, wear gloves & sleeves and use absorbent socks and pads as follows ;
- Absorbent socks – they should be used to form a temporary bund or dam to contain fluid, not as a large mop. Socks continue to function as a barrier even when saturated.
- Pads - for a final absorption, they should be left in contact with the fluid for about 2-3 minutes or until saturated. Each pad will capture up to one litre of fluid (Depending on viscosity)
- Blue bag – socks and pads shall be disposed using blue bag
- Used spillage kit must be disposed using approved waste disposal contractor
- A brand new spillage kit must be ordered by facility manager.
- Coat used for cleaning must be disposed.
- Safety shoes must be cleaned under the water outside the factory.
- Any affected ingredients, finished product or ingredient must be disposed.
- Chemicals Spillage log must be used to record chemicals spillages.
