Organic Sanitizer in Dry Environment
Hi everyone,
We are going organic. Currently we use an alcohol based sanitizer or quat sanitizer for any equipment that stays assembled. For smaller stuff we use the three sink method - wash, rinse, sanitize with quat.
Does anyone have a recommendation to replace quat in the three sink method other than PAA? Alcohol is costly and unrealistic for the amount of dishes we have and there are some material compatibility concerns with PAA. Are there any good off-the-shelf vinegar-based solutions or something milder than PAA? Preferably something cost effective with a short dwell time.
Thanks in advance!
Sodium hypochlorite / chlorine bleach?
Will they not let you use quat - or is it the rinse and validation that is the issue?
You could use high heat. Might not be cost effective though.

To my knowledge quat sanitizers are allowed in organic manufacturing but with some guard-rails. https://tilth.org/he...s-restrictions/

Yes. my thought too. Quat and chlorine would be readily available and fairly inexpensive. Seems like there is some reluctancy to stick with their quat product.
Your link is helpfull. Inside the link is the copied link, which has some usefull suggestions and requriements for other sanitizers. https://www.ams.usda...INAL RGK V2.pdf
another thought - a quick spray of Alpet D2 - QUAT FREE (should also be allowed but check with certfier). Perhaps still too expensive.

+1 on the Alpet. Definitely won't be the cheapest option.
Kind of like that old car saying: Fast, Cheap, Good. Pick 2.
Alpet will be fast and effective, but not cheap.
Good luck, Matt!
Thank you for giving me a reason to brush up on organic requirements. It's been a while.
