???  not clear what your asking

What is an auditor cut off point???

I'm interpreting this as a question about record retention policy, and the duration or lifetime of retained records.

Government regulations and audit standards usually set a minimum time that records must be retained for, and if you want to comply you need to retain them for at least that long.  Your company may choose to retain them for longer, but there are liability reasons for and against this.

Beyond this minimum retention time for general records you will also want to retain records for certain types of validations for as long as you want to utilize the process being validated.

If you have an auditor asking for general records beyond what the regulations or auding standard require, and you have destroyed them because they were beyond the retention time, you can simply tell them they're no longer available for that reason.  Your record retention policy should have this time defined, and you can show them that.
