Heat Penetration for Hot-Fill Without Retort

I want to perform a simple heat penetration study for the following process. Can anyone suggest the sample study which I can refer for this process. I tried to find the study, but all are related to retort process not similar to mine. Would appreciate if someone could suggest.

 

Process:

1- cooking at min. 195 F

2- hot filling in pouches at min. 185 F

3- vacuuming of pouches

4- holding the vacuumed sealed pouches for 5 min maintaining min. 180F.
